How long for decanting?
There is no exact time for this. It depends on your wine. In general, the younger the wine, the higher its tannin content and acidity, the longer it will take to decant.
Red wines with high tannins, such as Barolo, Brunello di Montalcino and Amarone Della Valpolicella, should be decanted for about two hours.
For reds like Pinot Noir and Gamay, it's best to limit the time to 30 minutes to an hour, with occasional tasters to check the wine's condition and avoid over-decanting.Chardonnay, decant for about an hour.
For old wines, decanting is just to remove impurities from the wine, so a few minutes is usually enough time to decanting. The faint aroma that remains dissipates more quickly if exposed to too much air.
